Inspired by the Spanish cowboy, or Vaquero, the design incorporates a rich material palette of charred timber, leather, and rope, reflecting this unique influence.  The client’s vision was to create a fine dining restaurant and cocktail bar nestled behind a butchery in Albion.

At Vaquero, meat takes center stage. Diners enter the restaurant through the butchery, where they can select their cut of meat and watch it being prepared in the open kitchen before being served at the table
